Apex Hotels has announced the end of a 16-year partnership between chef and TV personality Nick Nairn and his Kailyard restaurant at Dunblane Hydro Hotel. Nairn intends to refocus on Nick\u2019s and the Nick Nairn Cook School in Port of Menteith. <\/p>\n
He has been at the helm of the Kailyard since its launch, playing a defining role in shaping the restaurant\u2019s reputation and its celebration of local produce.<\/p>\n
The mutual decision to end the agreement comes as Apex Hotels reimagines the future of the restaurant with a refined concept, new name and fresh look as part of an overall refurbishment of the hotel.<\/p>\n
Brian Scanlin, who has worked alongside Nairn at the Kailyard for many years, will remain as executive head chef, bringing continuity and new creative direction as the offering evolves.<\/p>\n
Paul Mooney, area general manager for Apex Dunblane Hydro, said: \u201cNick\u2019s influence on the Kailyard and on the wider food scene in central Scotland has been remarkable.<\/p>\n
\u201cAs we embark on an exciting new era for the hotel, the evolution of our restaurant is a key part of our wider vision. With Brian remaining as executive head chef and a new concept in development, there is a great deal to look forward to.\u201d<\/p>\n
Nairn said: \u201cI\u2019m very proud of all the Kailyard has achieved. However, it\u2019s time for me to focus exclusively on the restaurant and cook school in Port of Menteith. I wish only the best for the Dunblane Hydro and the team.\u00a0<\/p>\n
\u201cI\u2019ll be a very interested onlooker as Apex invests in and improves the hotel I believe it\u2019s in good hands and I look forward to visiting as a guest.\u201d<\/p>\n
Apex Hotels will announce the new restaurant name, new menus and design directions in early 2026.<\/p>\n
